1 lb cheese tortellini
1/3 cup whole or part-skim ricotta
3-4 T chopped fresh parsley
4oz mozzarella, sliced
¼ cup parmesan cheese
2 cups marinara sauce (store-bought or homemade)
Pre-heat oven to 350. Bring a large pot of salted water to a boil over medium-high heat. Cook tortellini briefly, 3-4 minutes, and drain. Meanwhile, mix together marinara sauce with the ricotta and the parsley. In a large bowl, add drained tortellini to sauce mixture and combine gently. Transfer mixture to a quart dish and cover with mozzarella and sprinkle with the parmesan. Cover loosely with aluminum foil and bake for 15 minutes. Remove foil and bake an additional 10-12 minutes.
