Tortellini Salad


2 lbs. pre-cooked tri color tortellini

1 cup grape tomatoes, halved

¾ cup red onion, thinly sliced

11/2 cup diced red, green, yellow or orange peppers (any combination will do)

1 6oz can sliced black olives, drained

11/2 cups any zesty Italian salad dressing



Bring a large pot of salted water to a rolling boil.  Stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until pasta has completed cooking to a firm state, approximately 6-7 minutes, al dente. Drain well and allow to cool, toss all ingredients together and chill covered for at least 3 hours
